Prasini Salad

This is one of my all time favorite salads. It's very simple, but the flavors are a 10!  You can serve this as a side or as a main with your favorite protein. I love serving this salad with some grilled shrimp, but this would be great with grilled chicken, salmon or even tofu. I promise this will become one of your new favorite recipes.

Prasini Salad

Serves: 2

Ingredients

  • 8 oz raw, peeled and deveined shrimp

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon Italian blend seasoning

  • 2 romaine lettuce hearts (approximately 5-6 cups once chopped)

  • 1/4 fresh dill, loosely packed

  • 1/2 cup fresh parsley, loosely packed

  • 3 scallions

  • 3 oz feta cheese 

  • 2 tablespoons extra virgin olive oil

  • 1 lemon

  • pinch of salt

Instructions

  1. Season the shrimp with the garlic powder, salt and Italian blend seasoning. Toss to well combine.

  2. Grill or sauté the shrimp for 1-2 minutes on each side. Once fully cooked, set aside.

  3. Chop the romaine lettuce as thin as possible. Rinse and dry well before adding to a mixing bowl.

  4. Finely chop the dill and parsley and add it to the lettuce.

  5. Thinly slice the scallions both whites and greens and add to the salad.

  6. Crumble in the feta cheese and toss the salad to combine.

  7. In a separate bowl, pour in the olive oil. 

  8. Zest 1/2 of the lemon over the olive oil.

  9. Juice the entire lemon into the dressing and add a pinch of salt.

  10. Whisk the dressing until it's fully combined. If serving right away, dress the salad and top with the shrimp.
