Prasini Salad
This is one of my all time favorite salads. It's very simple, but the flavors are a 10! You can serve this as a side or as a main with your favorite protein. I love serving this salad with some grilled shrimp, but this would be great with grilled chicken, salmon or even tofu. I promise this will become one of your new favorite recipes.

Zest 1/2 of the lemon over the olive oil.

Juice the entire lemon into the dressing and add a pinch of salt.
